6 Ingredients to Key Lime Pie Heaven

We have a new obsession: homemade Key Lime Pie. It’s so good we feel the need to lick our plates, forks, the pie dish just to savor the taste. The best part: it’s SO easy!

I made my own crust because it just tastes way better. You need 1.5 cups of ground graham crackers (basically one of the packages inside a box of graham crackers ground up in a food processor), 1/3 cup of white sugar, and 6 Tbsp butter. Melt the butter and mix with the crackers and sugar until everything is moist. Press this into a 9 in. pie dish. You don’t have to bake it.

Filling: You need 2 cans of sweetened condensed milk, 1/2 cup of sour cream, 15 key limes

In a medium sized bowl combine the milk, sour cream, all the juice you can squeeze from your limes, and about a tsp of zest from the rinds. I find the easiest way to get just the juice without seeds or pulp is to use a strainer over a bowl. Really squeeze the limes-you don’t want to waste any good juice.  Stir everything together and pour the mixture into your crust. It will seem very soupy-it is supposed to be that way. Put the pie in a preheated 350 degree oven for 5-8 minutes. Do not let the pie brown. You will know it is done when tiny bubbles start to appear and possibly pop on the pie surface. My bubbles didn’t quite pop, but there were a few there and the pie was perfect.

Take the pie out of the oven and let it cool for a few minutes then chill it thoroughly before serving. It is better the colder it is (but not frozen!).

Enjoy!! Stock up on key limes. You will be making this a lot if you share with family and friends. Yes, it’s that good.

  1. This is pretty much the best thing ever. We devoured the first pie in approximately 24 hours. Then we went through a day of horrific withdrawl (fainting spells, depression, irritability, high blood pressure and low gas mileage) before invading Safeway and draining them of their key lime stock in order to make another. Which we have nearly finished.

    Bill & I are working hard NOT to cave in to these things that might tempt us to lose control. 🙂
